Sneaky veggie cake

My oldest (3.5) is a literal house plant. He grows purely from water and fresh air. I was stressing to my mom one day about his lack of nutrition and she of course had a veggie sneak attack cake! Bonus, this cake is so easy!!

Ingredients:

Boxed spice cake mix

3 eggs

1/2 cup vegetable oil

1 cup water

Pumpkin purée (I do the 12oz can)

I add carrots and zucchini.

Steps:

Make boxed spice cake per package. And pumpkin purée. If you want to add extra veggies, run through food processor and purée. Mix together. Bake per package instructions.
